PALEO EATING on the RUN
Just finished talking to team member, Jackie of Tarboro, NC who is going on a bus trip to the casinos in VA. Now this is exciting, but as we began talking, we realized trips like this can be problematic for people like us. While we cannot live in a bubble and deny ourselves some fun, these are the tips that I shared with her. They may be helpful for you as well, throughout the entire party season. Enjoy!
CAVE MAN WRAPS are the way to go:
START WITH A BASIC WRAP
BUTCHER COUNTER at THE SUPERMARKET IS BEST,
to ensure your slices are NITRITE -FREE
This is a good brand in a pinch
(replaces Mayo and Mustard)
Use your hummus as a dip for raw veggies
or liquify with a little olive oil and water to desired consistency
and make SALAD DRESSING

CABBAGE LEAF WRAPS
To braise the Cabbage or Collard green leaves before using as a wrap
Large frying pan
1-2 TBS of OLIVE OIL or Butter
Lay the leaves flat in the pan-they may be stacked, but no more than 4-6 at a time
Add about 1-2 TBS of water
Cover and turn heat down as low as possible
Allow leaves to turn bright green, slightly wilted, then remove
Store your leaves flat in a square plastic container
CABBAGE LEAF WRAP
with homemade salsa and zucchini
VOILA-SALSA is made!!
BASIC LETTUCE LEAF
This wrap contains white meat turkey slices and tomatos
wrapped in letturce of your choice, except ICEBERG
SEAWEED WRAPS (NORI)
This wrap is Alfalfa sprouts, avocado slices, tomato and zucchini slices
The outer part is made with NORI
(NORI is seaweed, also known as Kelp)
Red pepper, omelette, sausage and onions
NOT SO BASIC WRAP STUFFING!
Chinese food seafood dishes make wonderful wrap ingredients
Make your own or buy a quart-size takeout and wrap until gone!
Shrimp, peas and scrambled eggs
Don't forget your toothpicks to keep your wraps neat
